In traditional lore, jasmine blossoms are said to open most fully under moonlight, releasing their strongest fragrance at night. Tea artisans in Fuzhou learned to wait until evening, layering fresh jasmine flowers over green tea leaves, then removing the spent blossoms by dawn.
This ritual, repeated many times for high-grade tea, became known as “borrowing the flower’s soul.” It’s not myth: classical tea texts describe nighttime scenting as essential for capturing jasmine’s true aroma.
Jasmine itself entered China via the Silk Road during the Han–Tang periods, but it flourished in Fujian’s humid hills. Poets compared its perfume to heavenly nectar, and some folk tales say the moon goddess Chang’e favored jasmine-scented tea for its calming clarity.
Whether or not that’s true, jasmine tea became a court favorite by the Song dynasty.
